2017 Mounts Cabernet Sauvignon Estate Dry Creek Valley
Beautiful and robust with aromas of black current, black cherry, and truffles. It has a trace of graphite and chocolate in the background. Flavors of blackberry and caramel swirl lavishly on your palate. Tannins are polished and firm helping to create a long and seductive finish.
Clone 337 Cabernet Sauvignon planted 2007, “See” Clone planted in 1990.
Whole berry destemming, 4 - 5 day cold soak, punch downs 3 times per day. Native yeast fermentation in small, open top, one ton fermenters. Total skin contact 24 days. Barrel aged 21 months in 100% new French oak. Bottled unfined and unfiltered.
